Kitchen Tip Tuesday

OK, I love Tammy's blog - especially for the recipes. The cool kitchen tips are a plus, though! I am participating today... with the following tip. (Don't laugh!)

Yesterday I was making Mac and Cheese for lunch. I had the elbows, but I needed to kill off some Velveeta instead of my usual sharp cheddar Betty Crocker recipe (you know, budget and all!). For every pot luck one of the ladies at church makes Velveeta mac and cheese - and frankly - I had a craving! So, I googled a recipe and found this one:

It was totally funny to read and the recipe was great. Part of the recipe called for a double boiler - and here's my tip - since I was boiling the pasta I used that as my boiler part (and the clean bowl in the sink fit better on the pasta pan! I'd hate to have to *find* a clean dish in a cabinet!). I had to monitor the water a little more than with a regular double boiler for too much boil-over - but it worked awesome! The pasta and the sauce were done at about the same time (the sauce a couple minutes before - so the pasta was not overcooked). It was great - fewer dishes and less energy used!
